Eid al-Adha

November 28, 2009
"Festival of Sacrifice" or "Greater Eid" is a holiday celebrated by Muslims worldwide to commemorate the willingness of Ibrahim to sacrifice his son as an act of obedience to God. It is also celebrated by the non-Muslim Druze.

Eid al-Adha is the latter of two Eid festivals celebrated by Muslims, whose basis comes from the Quran.

Eid al-Adha annually falls on the 10th day of the month of Dhul Hijja (ذو الحجة) of the lunar Islamic calendar. The festivities last for three days or more depending on the country. Eid al-Adha occurs the day after the pilgrims conducting Hajj, the annual pilgrimage to Mecca in Saudi Arabia by Muslims worldwide, descend from Mount Arafat. It happens to be approximately 70 days after the end of the month of Ramadan.

2012 Movie Review: Places and Foods

November 24, 2009
I was told about the movie by my younger brother, I didn’t really bother, until I watched the teaser trailer. I thought it was too much. Yet, when I received the emails about the actual events leading to 2012, it was no teaser or joke.

My failed attempt getting 2012 premier tickets thru my contacts, clients and friends, had made me miserable for weeks. Luckily, a good blogger friend offered me premier tickets that I would never refuse. She is such a charmer, only missing the lights on her head and wings on her back.

The movie started well, when a scientist realized the upcoming problems leading to 2012. Such events are real scientific proven events that did gave me some goose bumps. The unstable condition of the sun leads to unprecedented activities beneath earth. Also, the super accurate Mayan calendar that predicted the event that will be happening on 2012. Not to mention the prediction of I-Ching, Bible and so on.

So then the movie then continued to the understanding of world leaders upon such event. In secrecy they made a master plan. As the deadline becomes nearer the story shifted to the family of John Cusack. He a divorced father decided to bring his kids to the Yellow stone park turned to an adventure they would live for.

I would stop here and you all should watch the rest.

The movie effects were out of the world. It was amazingly well done. Story flow was very good and it was much better than “Day After Tomorrow” and Transformers 2. Even though the movie was more than 2 hrs, it was well made.

Resurrection and The Maya

On the calendar made by the Maya, December 21, 2012 is the end of the calendar calculations, and, during the Maya calendar proved accurate. Thus, many people concluded that this date, the Hour will come, and all mankind would perish.

...

2012 is an upcoming disaster film directed by Roland Emmerich. The film has an ensemble cast, including John Cusack, Amanda Peet, Danny Glover, Thandie Newton, Oliver Platt, Chiwetel Ejiofor, and Woody Harrelson. The film will be distributed by Columbia Pictures. Filming began in August 2008 in Vancouver. The film's release date is November 13, 2009.

The film explores the idea of a global doomsday event coinciding with the end of the Mayan Long Count Calendar's current cycle on or around December 21, 2012 (the northern hemisphere's winter solstice).

Jackson Curtis (John Cusack) is a divorced father who occasionally works as a limousine driver and a writer, while his ex-wife (Amanda Peet) and children live together with her new boyfriend. In Guatemala reports start coming in of mass suicides in the Mayan jungles of people attempting to avoid the impending apocalypse. The IHC (Institute for Human Continuity), a secret organization, has realized the situation and begins constructing vast arks beneath the Himalayan mountains designed to withstand most natural disasters in order to save both humanity, significant species, and the greatest treasures of mankind for when doomsday finally happens. There are arguments however about how and when the governments of the world will alert their fellow citizens and even discussions about how the remaining survivors will be selected to survive the catacalysm.

Meanwhile on a day trip to Yellowstone with his two young children, Jackson meets Charlie Frost, who hosts his own radio segment and blog about his belief that the Mayans are correct about 2012. Over the coming days vast cracks are found within the fault lines in California, and despite the pleas from the government that everything is fine, Jackson isn't convinced. Hiring a private plane and gathering crucial supplies he races to his ex-wife's L.A. home to save himself and his family from the Earth's crust displacement occurring all around them. After a long and dangerous race through the collapsing streets to get to Santa Monica Airport, Amanda's new boyfriend Gordon uses his pilot skills to get the family to safety as the runway crumbles beneath them. As they look back the entire cityscape of Los Angeles has already started to crumble into the Pacific.

When they discover that the global cataclysm is happening much faster than expected, they must race to these ships in order to save the human race before all is lost. It soon becomes clear that it's not just Los Angeles that's experiencing disaster, the Yellowstone Supervolcano erupts, Las Vegas is destroyed by a massive chasm that cuts through the city and an ash cloud from the Yellowstone eruption, more massive earthquakes occur in South America (one of which destroys the city of Rio de Janeiro). Washington, D.C. is flooded by an enormous tsunami which crushes the White House, and The Vatican in Rome crumbles into oblivion, destroying thousand-year old Catholic architecture and killing hundreds of worshipers within seconds. As worldwide floodings get worse (even at one point beginning to climb over the Himalayas), the U.S. government declares the end of the world.

A group of survivors, including Jackson Curtis and his family must fight their way to China before they can board the great arks and save themselves from the gigantic tidal waves flooding the Earth.

The end of The World...

Hand Held Impulse sealers

October 10, 2009
Hand Held Impulse sealers are ideal for sealing polyethylene and laminated foils. Applications include sealing around oddly shaped products including drum or box liners or for sealing around large objects such as furniture.
Each sealer is lightweight and portable. The operator simply squeezes the handles to open the jaws and clamps on to the film being sealed. A start button located on the seal jaw is activated. An indicator light on the main housing signals the start and finish of the seal cycle.

The heat cycle is controlled by a timer on the main housing. The operator simply increases or decreases the heat as desired. Upon completion of the cycle, the operator again squeezes the jaw, releasing the sealed product. All controls are solid state. An eight foot power line cord and eight foot sealer cord is standard.

Options include flat band elements (1/8, 3/16, ¼ or ½ inch), wire cut elements, or a cold cut wire. A 220 Volt option is also available. Each unit comes complete with a two-year warranty, detailed operating instructions, and a spare parts kit.

Rendang Food and earthquake Padang Sumatera

October 02, 2009
An earthquake measuring 7.6 on the Richter scale that shook Pariaman, West Sumatra, Wednesday (30 / 9) evening, residents also felt in Medan, North Sumatra. Like the Sun Plaza shopping center in Jalan Zainul Arifin. Hundreds of visitors who were inside the building flew straight away to save themselves.

Similar conditions were also seen in the office complex of Bank Danamon, Jalan Diponegoro. A number of workers was panicked and ran out of the building despite the ongoing activities of the office. According to a bank employee, although the quake only lasted for about 6 seconds, the vibration is felt. Worried that aftershocks, they are generally active in selected home-rise building more quickly.

Rendang, but identical with the city of Padang, is a MANDATORY menu in the restaurant in Padang. There's no way a Padang restaurant did not serve rendang menu.

Cooking rendang has the basic ingredients beef, will keep some rendang meat dishes there that use goat meat, although very rare, except rendang is homemade. Chances are rare rendang dish using goat meat as beef rendang is a must hold for days, while meat goats can not survive long enough.

In some rendang dishes, sometimes seen with other materials, including: - Potatoes. There are accompanied by a potato rendang. Usually used potatoes are small potatoes, with a diameter of no more than 2-3 cm. Just as rendang, also potatoes and mixed and processed in such a way with rendang spices, so that the aroma and taste rendang spices will seep into it.

* Kidney beans. In cooking rendang homemade, red beans sometimes replace potatoes to accompany rendang. Perhaps it sounds and feels a little strange at first try, but for those who've used it will become addicted.

In general, rendang is a spicy taste, but if it is a desert diner menu, depending on the level of sharpness eat homeowners policy. If you've been to Padang or rendang taste created by the people of Padang 'original', you will feel the difference with the rendang is sold at the restaurant in Padang. In addition to the more flavor permeates rendang, spicy taste will be more felt. Another thing is the other material encountered, as written above.

Rendang has uniqueness. The longer the rendang, it will be more comfortable. It means if you make rendang on Monday and did not run out, you do not need to fear rendang will be rotten. Simply re cooked (heated), no need to add more seasoning, then serve again in the next days. So think rendang spices will increasingly absorb into the meat. Flesh becomes a problem (too) hard, it means you have to use the best quality meat ... do not blame the meat.

Food after Lebaran

September 29, 2009
When Lebaran, there were many changes in diet and activity. Various dishes are presented, generally high cholesterol and fat. "It should be noted is the fat intake. Most of the fat will raise cholesterol levels, trigliseride and narrowing of blood vessels. As a result, blood flow less smoothly. This can trigger heart disease, "Dr. Aulia Syawal Clearly SpJP to Sripo some time ago when the cardiologist in Palembang.

The sidelines of a big meal, to eat fruit or snack. "If eating every three hours is usually no problem. Lebaran even including the time. "The problem is, those who are regularly eating every three hours, would not be eating too much. You see, her stomach is never completely empty. While those who do not follow the diet three hours, usually eat too much when your stomach is empty.
Perform Stretching

In terms of fitness, after Lebaran stomach usually filled foods relatively awake condition, now a bit chaotic. If the condition of the body down and get food that is relatively less healthy, would be easy to attack the disease. "To stay fit, you should plan carefully Lebaran. Especially for the forth. Especially, if going home with a private vehicle, "said Dr. Irvanuddin SpKO the Science Studies Program FK Unsri Sports Medicine.

When back around, usually on the streets congestion, especially those with private vehicles or public buses. As a result, the journey can take 10 hours or even more. "Keep trying to eat every 3 hours. While drinking, should not once more. A little but often. Eg 100-150 cc every half hour. This makes us not have too often given the difficulty of seeking pee urinal in the journey.

From the physical aspect, "often better to do stretching in a vehicle. Minimum of 2 hours once to avoid the rigidity of the muscles and joints. If it had come down from the vehicle, the better. "I can jog a minute or stretching. Because the blood must flow smoothly from the bottom up. "There are a lot of stretching model. "Think of it like stretching on a chair. So, starting the neck muscles to leg muscles, including the hands, driven. "

To stretch my legs for too long the clutch, for example, do stand-squat movement. "The goal of stretching is that muscles are not rigid. Essentially, muscles tensed and then , the left side and right side, "said Irvan. Make a count of 10 to one side, then count to 10 the other side, could be a set or two sets.

If fitness continue to be maintained, although the food was not too awake for back forth, actually there is no problem.

Lebaran Food and diarrhea

September 27, 2009
Several types of diseases that may arise during Lebaran of diarrhea, and also the possibility of food poisoning. both types of disease caused by dietary changes encouraged to eat all kinds of foods available during the celebration of Idul Fitri holidays, a month after the month of fasting.

"The desire to eat so much that sometimes they do not notice the cleanliness of the food.

In addition, disease upper respiratory infections (ARI) are also still need to watch out for, given the weather is very hot and stinging in the day, and cold in the morning.

"As usual, respiratory infection including influenza has always been a disease that is often experienced by people.

However, he said, people do not have to worry about the supply of drugs for various diseases that often appear on the day of Lebaran.

"The drugs for the disease is always available because it involves groups of essential drugs.

- Do not just eat food 'big' (rice and side dishes). Instead, wait about an hour before you eat 'big', so that blood sugar levels and body fluids back into normal position.

- Expand the consumption of foods containing fiber at dawn, so that the emptying of the stomach 'walk' more slowly.

Fasting month and Food

During the fasting month, the Trade Ministry, in cooperation with businesspeople, often conducts so-called market operations, selling basic goods, including rice, sugar and cooking oil, to the country’s poor families at below market price. The ministry has yet to announce such market operations for this year.

The governor also said he expected the number of Jakarta residents traveling to their hometowns to celebrate Idul Fitri to increase by 10 percent, adding that his administration was readying four main bus stations — Kalideres in West Jakarta, Pulo Gadung and Kampung Rambutan in East Jakarta, and Lebak Bulus in South Jakarta — and 11 support bus stations to serve travelers.

Millions of Indonesians will travel home for Idul Fitri, which this year falls on Sept. 21 and 22.

Fasting Gods gift with Food

Who fasts?
Let's start with dogs and cats. Have you ever seen an injured animal? What do they do? They do not eat, they just lay there. Do they know something we do not know? They usually regain there health rapidly.

Why fast?
There are a number of reasons. In this example with animals it is just natural for them, natures way. When they quit eating solid food, this shuts down there digestive tract. The digestive tract uses up about half of the bodies energy. When you shut this process off your body has twice the energy to put into repairing physical damage or any abnormalities in the body. The body focuses it's energy on repairing any damage including cancer cells, anything that needs fixing.

Will I be hungry?
I am the type of person who gets a headache when I even think I'm going to be late eating. At the time of writing this I have done an eight day juice fast. To my surprise I did not get a headache or feel any hunger what so ever. This is not to say that others might go through a number of different things. Later in this article I will discuss why you might go through discomfort or provide links to further information for your discernment.

Juice fast?
Juice fasting is the most popular way of fasting these days. The older water fast is really not good for long periods. Water is not what it used to be and there are so many more toxin's in the body today. For a juice fast you want juice with no pulp, you do not want to be processing solids. You can use store bought juices but because these are all processed, Example "pasteurized at high temperatures" a lot of the goodness is gone. If we were meant to ingest stuff like this wouldn't it grow naturally.

Fresh made juice from a juicing machine would be the best thing. Fresh juice from nature to the body is the way we were meant to eat. Fresh juice contains enzymes and other genetic material that your body really likes. I was having 3 eight once glasses a day. Fruit juice in the morning, vegetable juice for lunch and diner. In general apple and tomatoe juice mix well with other fruits and vegetables. On there own they can be strong and you can dilute them with water. Also you can drink as much water as you would like. Your body needs at least 8 glasses normally so you will probably be drinking even more than that.

Besides the body being mostly water and needing water all this water helps to flush toxins from your body. Besides toxins being flushed through your urine, they will come through your skin also. This can cause eruptions in the skin such as pimples and blisters. This depends a lot on the amount of toxic waste built up in your body. As you further research fasting you will find that you can clean your colon after 3-4 days to help clean out crud and help the detoxification process. It depends a lot on why you are fasting in the first place. If you are just doing a cleansing fast of a few days you might not do a colon cleaning.

Ramadhan and Food

August 28, 2009
Ramadan (Arabic: رمضان‎, pronounced: /rɑmɑd̪ˤɑːn/) (also written Ramazan, Ramzan, Ramadhan, Ramdan, Ramadaan) is the ninth month of the Islamic calendar. It is the Islamic month of fasting, in which participating Muslims refrain from eating, drinking, smoking, and indulging in anything that is in excess or ill-natured; from dawn until sunset [1] Fasting is meant to teach the Muslim patience, modesty and spirituality. Ramaḍān is a time for Muslims to fast for the sake of God (Arabic: الله‎, Allāh), and to offer more prayer than usual. During Ramaḍān, Muslims ask forgiveness for past sins, pray for guidance and help in refraining from everyday evils, and try to purify themselves through self-restraint and good deeds. As compared to solar calendar, the dates of Ramadan vary, moving forward about ten days each year. Ramadhan was the month in which the first verses of the Qur'an were revealed[Qur'an 2:185] to the Prophet Muhammad.

The name "Ramaḍāma" had been the name of the ninth month in the Arab world long before the arrival of Islam; the word itself derived from an Arabic root rmḍ, as in words like "ramiḍa" or "ar-ramaḍ" denoting intense heat, scorched ground and shortness of rations. In the Qu'ran, God proclaims that "fasting has been written down (as obligatory) upon you, as it was upon those before you". According to the earliest hadith, this refers to the Jewish practice of fasting on Yom Kippur.

The most prominent event of this month is fasting. Every day during the month of Ramadan, Muslims around the world get up before dawn to eat Sahur, the pre-dawn meal, then they perform the fajr prayer. They have to stop eating and drinking before the call for prayer starts until the fourth prayer of the day, Maghrib. Muslims may continue to eat and drink after the sun has set until the next morning's fajr prayer call. Then the process starts all over.

Ramadan is a time of reflecting and worshipping God. Muslims are expected to put more effort into following the teachings of Islam and to avoid obscene and irreligious sights and sounds. Sexual thoughts and activities during fasting hours are also forbidden.[Qur'an 2:187] Purity of both thoughts and actions is important. The fast is intended to be an exacting act of deep personal worship in which Muslims seek a raised awareness of closeness to God.

The act of fasting is said to redirect the heart away from worldly activities, its purpose being to cleanse the inner soul and free it from harm. It also allows Muslims to practice self-discipline, self-control , sacrifice, and empathy for those who are less fortunate; thus encouraging actions of generosity and charity. However, a certain level of self-control can be lost by those who suffer from eating disorders.

Fasting and Food

August 21, 2009
Fasting is part of the faith life of religions old and new all over the world. In a fast, the believer chooses, for a set time, to do without something that is hard to do without. This is done so it does not come between the believer and God, so it cannot act as a god over that relationship and over the life of the believer.

Usually, the fast is to do without food. Food is one of the great blessings of God in our lives, a true pleasure and a true necessity. But humans tend to be gluttons; we want to eat more. Our hunger can compel us, force our hand, occupy our thoughts. When we have anything in our lives that we don't or can't say no to, then it is lording over us. But God is in control. If something else takes up God's place in our lives, it is an idol, and we are living in something akin to idolatry. Fasting helps to bring it back into enough control for us to surrender it to God so it can be returned to its rightful place in life. Food is the foremost example of such a thing.

You can fast from some foods, and not others. You can fast from watching television, having sex, and buying pleasure items, even from buying ordinary stuff. You can fast from hobbies you crave, places you are unhealthily drawn to, music, books, news, and movies. You might even find it necessary to be fasting from use of the Internet -- though please don't start until you're done using this site. :) If you can be described as a 'junkie', 'freak', or 'fanatic' about something, that's a good thing to fast from. For most people in North America, and the upper classes all over the earth, the most important fasting may be to fast from being a consumer of goods, for our role as a consumer consumes us spiritually. For Catholics, fasting for Lent is one of the most enduring hallmarks of their tradition.

Ramadan, the ninth month in the Islamic calendar, is special to millions of Muslims worldwide as a holy period dedicated to fasting, self-purification, and spiritual attainment. Every year the world’s Muslims redesign their life to focus on the goals of Ramadan: A whole-body awareness of God and a humble thankfulness for whatever blessings He has granted.

Muslims follow dietary laws that are similar to Jewish kosher regulations. Foods that Muslims can eat are called Halal. Prohibited foods are called Haram and questionable foods are called Mashbooh. Swine and pork products, as well as meat not properly slaughtered or slaughtered in any name other than Allah are Haram. Carnivorous animals and birds or prey are also Haram. Haram animals include pig, dog, donkey, carnivores, monkeys, cats, lions, frogs, crocodiles, turtles, worms, flies, cockroaches, owls, and eagles. Alcohol, coffee, tea and other drugs are Haram. Halal foods that have become contaminated by contact with prohibited foods are also Haram.

Fasting is also important. Fasting is a way to earn the approval of Allah, wipe out previous sins and understand the suffering of the poor. Fasting is one of the Five Pillars of Islam. Muslims fast during the month of Ramadan and voluntary fasting on Mondays and Thursdays is also common. Muslims are encouraged to only eat to two thirds of capacity.

The Muslim holy month of Ramadan, in which Muslims fast from just before sunrise to sunset each day, is upon us again. This year it begins in mid-November. Special issues that may arise in a pharmacy during Ramadan include providing advice on appropriate diet and on medical compliance among the Muslim population. In this article, I provide a personal perspective of why Muslims fast and, as a Muslim pharmacist, what advice I consider may be appropriate for fasting customers both healthy and those on medication, such as diabetic patients

The observance of fasting during Ramadan constitutes one of the five pillars of Islam. The experience of fasting is intended to teach Muslims self-discipline and self-restraint, and understand a little of the plight of the less privileged (e.g., the hungry, thirsty and the poor). Furthermore, Ramadan fasting is not just about disciplining the body to refrain from eating and drinking from predawn until sunset but is also about exerting control over the mind. This involves restraining anger, doing good deeds, exercising personal discipline, and preparing oneself to serve as a good Muslim and a good person. Ramadan is a month of peace and love in which individuals are encouraged to bury differences, to forget and forgive and to renew both human and spiritual relationships. Therefore, it contributes to the overall principle of making the individual more humane, more considerate and generally a more responsible member of society. In this way, the month of Ramadan ultimately benefits society not just the individual. It does this, in part, by setting a standard for behaviour not only in this month but during the rest of the year and, indeed, every year of a Muslim's life. These principal tenets of Ramadan are important when considering our intentions and subsequent actions during this spiritual month, including those pertaining to the health of the individual.

Fasting during Ramadan is prescribed for every healthy, adult Muslim whereas the weak, the sick, children, travellers and menstruating women are among those exempt. Muslims observing the fast are required to abstain not only from eating food and drinking water but also from consuming oral medicines and injecting intravenous nutritional fluids. However, not all Muslims who are ill seek this exemption and insist on fasting in any case. Fasting by Muslims during illness can cause problems if not supervised by health professionals. However, health problems during Ramadan can develop in otherwise healthy individuals and such patients could benefit from receiving advice on their diet.

Malnutrition of Food

August 09, 2009
The extremes of optimal health and death from starvation or malnutrition, there is an array of disease states that can be caused or alleviated by changes in diet. Deficiencies, excesses and imbalances in diet can produce negative impacts on health, which may lead to diseases such as scurvy, obesity or osteoporosis, as well as psychological and behavioral problems. The science of nutrition attempts to understand how and why specific dietary aspects influence health.

Nutrients in food are grouped into several categories. Macronutrients means fat, protein, and carbohydrates. Micronutrients are the minerals and vitamins. Additionally food contains water and dietary fiber.

Some countries list a legal definition of food. These countries list food as any item that is to be processed, partially processed or unprocessed for consumption. The listing of items included as foodstuffs include any substance, intended to be, or reasonably expected to be, ingested by humans. In addition to these foodstuffs, drink, chewing gum, water or other items processed into said food items are part of the legal definition of food. Items not included in the legal definition of food include animal feed, live animals unless being prepared for sale in a market, plants prior to harvesting, medicinal products, cosmetics, tobacco and tobacco products, narcotic or psychotropic substances, and residues and contaminants.

Food in Internet Cyber Space

August 07, 2009
Well, well, there has been quite a flurry of happenings in the food agglomeration of the cyber whosits. First of all, RecipeThing lauched. That was a seminal moment.

No, no, seriously. A few days ago whilst we all slept, Yahoo went live with "Yahoo Food." It is a very attractive site, and it appears to be highly informed by All Recipe's color palette even--this does look like a very collaborative venture. It's got vids and so forth. So that's quite a find, and probably a good move for Yahoo.

Thanks to Google Blogoscoped for their work on this. They did a mockup of what a Google-Food page would look like, and it advocates a trick that RecipeThing does, i.e. to let you put a recipe in your database.

Food Lovers Team has launched iTV Food and Wine Lovers channel. I'd like to ask for your recommendations on shows/videos to be included in the program.
Also, if you are a local chef and want to be interviewed on this channel let me know. We also do live streaming of local food and wine shows!

Look forward to reading your recommendations!

The food industry

July 24, 2009
The food industry is the complex, global collective of diverse businesses that together supply much of the food energy consumed by the world population. Only subsistence farmers, those who survive on what they grow, can be considered outside of the scope of the modern food industry.

The food industry includes:

* Regulation: local, regional, national and international rules and regulations for food production and sale, including food quality and food safety, and industry lobbying activities
* Education: academic, vocational, consultancy
* Research and development: food technology
* Financial services insurance, credit
* Manufacturing: agrichemicals, seed, farm machinery and supplies, agricultural construction, etc.
* Agriculture: raising of crops and livestock, seafood
* Food processing: preparation of fresh products for market, manufacture of prepared food products
* Marketing: promotion of generic products (e.g. milk board), new products, public opinion, through advertising, packaging, public relations, etc
* Wholesale and distribution: warehousing, transportation, logistics
* Retail: supermarket chains and independent food stores, direct-to-consumer, restaurant, food services

Food processing is the methods and techniques used to transform raw ingredients into food for human consumption.Food processing takes clean, harvested or slaughtered and butchered components and uses them to produce marketable food products.there are several different ways in which food can be produced.

One Off Production This method is used when customers make an order for something to be made to their own specifications, for example a wedding cake. The making of One Off Products could take days depending on how intricate the design is and also the ability of the chef making the product.

Batch Production This method is used when the size of the market for a product is not clear, and where there is a range within a product line. A certain number of the same goods will be produced to make up a batch or run, for example at Gregg’s Bakery they will bake a certain number of chicken bakes. This method involves estimating the amount of customers that will want to buy that product.

Mass production This method is used when there is a mass market for a large number of identical products, for example, chocolate bars, ready meals and canned food. The product passes from one stage of production to another along a production line.

Just In Time This method of production is mainly used in sandwich bars such as Subway, it is when all the components of the product are there and the customer chooses what they want in their product and it is made for them fresh in front of them.

Orange juice

July 15, 2009
Orange juice is a popular breakfast beverage, superior to most other juices in its nutrition value. U.S. laws mandate that the label “orange juice” only be used for juices containing 100% juice.

Hard-core orange juice enthusiasts should be sure to get a glimpse of the “world’s largest orange juice glass,” constructed in honor of National Minority Cancer Awareness Week. The state of Florida claims orange juice as its “state drink,” even boasting its own Department of Citrus, which introduced the 8-foot-tall acrylic glass, full of 730 gallons of unconcentrated Valencia orange juice.
Varieties
Fresh-squeezed juice trumps other orange juices in any taste-battle. It can be made at home or purchased at some markets, at a higher price to match the superior flavor.

Alternately, OJ connoisseurs can almost always find the packaged juice to meet their unique tastes: pulp-free or with extra-pulp, mixed with other juice flavors or infused with extra “country-fresh” flavor.

Almost all orange juice sold in U.S. grocery stores is “reconstituted,” which means it has been concentrated, frozen and then revived with water.

Orange juice is easy to find in grocery stores in the refrigerated and frozen sections, though “fresh-squeezed” juices are often only available at specialty markets.

Storage Tips
• Fresh-squeezed juice can be kept in the refrigerator for a few days.

• Check the “use-by” dates on store-bought juices.

• Frozen juice and juice concentrates can last for a month in the freezer until they lose nutritional and taste value.

Orange juice and frozen orange juice concentrates play important roles in mixed drinks, smoothies and breakfast drinks, as well as a surprisingly large number of cooked dishes, sauces and glazes.

If you have the time, squeezing your own fresh orange juice is almost always the tastiest choice.

Juicing Tips:
• When using oranges for their zest and juice, be sure to zest the orange before juicing.

• An average orange will yield between 1/3 and ½ cup of juice.

• To yield the most juice, an orange should be room-temperature or warmer. Oranges can be heated in the microwave for 30 seconds to prepare them for better juicing.

• Roll the orange under your palm on a hard surface to soften it before juicing.

• If you only need a bit of juice at one time, make a toothpick-hole in the skin through which to extract juice, and then leave the toothpick in the hole to “seal” it and maintain freshness.

Orange juice is a quick and easy way to increase your intake of fruit servings (one 8 oz. glass = one serving of fruit).

Nutrients in food

July 14, 2009
Many individuals limit what foods they eat for reasons of morality, or other habit. For instance vegetarians choose to forgo food from animal sources to varying degrees. Others choose a healthier diet, avoiding sugars or animal fats and increasing consumption of dietary fiber and antioxidants.

Between the extremes of optimal health and death from starvation or malnutrition, there is an array of disease states that can be caused or alleviated by changes in diet. Melinjo Gnetum gnemon

July 11, 2009
Melinjo (Gnetum gnemon) has respiratrol for the human who want to be young forever.

Gnetum gnemon is a species of Gnetum native to southeast Asia and the western Pacific Ocean islands, from Assam south and east through Indonesia and Malaysia to the Philippines and Fiji. Common names include Melinjo or Belinjo (Indonesian language), Bago (Malay language, Tagalog language), Peesae (Thai language), dae (Kwara'ae language) and Bét, Rau bép, Rau danh or Gắm (Vietnamese language). They are sometimes called padi oats or paddy oats.

It is a small to medium-size tree (unlike most other Gnetum species, which are lianas), growing to 15-20 m tall. The leaves are evergreen, opposite, 8-20 cm long and 3-10 cm broad, entire, emerging bronze-coloured, maturing glossy dark green. The fruit-like strobilus consist of little but skin and a large nut-like seed 2-4 cm long inside.

Fleshy strobili weigh about 5.5g, the seed alone 3.8g. Strobili mature mainly from June to September in NE Philippines. The red strobili are eaten by birds, mammals and reptiles.

It is widely used in Indonesian cuisine. The seeds are used for Sayur Asam (Sour Vegetables Soup) and also, grind into flour and deep-fried as crackers (emping, a type of krupuk). The crackers have a slightly bitter taste and are frequently served as a snack or accompaniment to Indonesian dishes. The leaves are also commonly used for vegetables dishes in Indonesia.

Recently, Japanese scientists (Mori, M., et al., 2008) found that Gnetum gnemon (id:melinjo) is not the cause of gout disease (uric acid disease).

Melinjo is native to Indonesia and very popular in this country. Lately, it is found that melinjo strobili are rich in polyphenol component which is called resveratrol. The resveratrol substances that found in melinjo is identified as dimer form and was published in XXIII International Conference on Polyphenols, Canada, in 2006.

Melinjo resveratrol, having antibacterial and antioxidative activity (Hisada, H., et al., 2005), exhibit good effects as food preservative, off flavour inhibitor and taste enhancer (Santoso, M., et al., 2008). And make an important step on food industries which do not use any synthetic chemicals in their processes.

At the present, Melinjo Extract is produced and supervised under cooperation between Indonesian Agricultural Association (NOFA (id:KTNA) ; Ikamaja's Mother Organization) and JASMELINDO (Japanese Non-Profit Organization), to protect certain profit for Indonesian farmers.

The sugar, fat and salt in food

July 10, 2009
The food industry is creating and marketing unhealthy food in much the same way that tobacco companies manufactured and sold cigarettes. But overeating doesn’t only affect people who are overweight. In fact, more than 70 million Americans have become conditioned to overeat, and it affects people of all different weights. Most of the foods served at restaurants combine tempting amounts of sugar, fat, and salt.

Potato skins: The potato is hollowed out and the skin is fried, which provides a substantial surface area for “fat pickup.” Then some combination of bacon bits, sour cream, and cheese is added. The result: fat on fat on fat on fat, loaded with salt.

Buffalo wings: The fatty parts of a chicken get deep-fried. Then they are served with creamy or sweet dipping sauce that’s heavily salted. Usually they’re par-fried at a production plant, then fried again at the restaurant, which doubles the fat. The result: sugar on salt on fat on fat on fat.

Spinach dip: The spinach provides little more than color—a high-fat, high-salt dairy product is the main ingredient. The result: a tasty dish of salt on fat.

Vegetarian diets have slightly weaker bones

July 03, 2009
People who live on vegetarian diets have slightly weaker bones than their meat-eating counterparts.

A joint Australian-Vietnamese study of links between the bones and diet of more than 2,700 people found that vegetarians had bones five percent less dense than meat-eaters, said lead researcher Tuan Nguyen.

The issue was most pronounced in vegans, who excluded all animal products from their diet and whose bones were six percent weaker, Nguyen said.

There was "practically no difference" between the bones of meat-eaters and ovolactovegetarians, who excluded meat and seafood but ate eggs and dairy products, he said.

"The results suggest that vegetarian diets, particularly vegan diets, are associated with lower bone mineral density," Nguyen wrote in the study, which was published Thursday in the American Journal of Clinical Nutrition.

"But the magnitude of the association is clinically insignificant," he added.

Nguyen, who is from Sydney's Garvan Institute for Medical Research and collaborated on the project with the Pham Ngoc Thach University of Medicine in Ho Chi Minh City, said the question of whether the lower density bones translated to increased fracture risk was yet to be answered.

"Given the rising number of vegetarians, roughly five percent (of people) in western countries, and the widespread incidence of osteoporosis, the issue is worth resolving," he said.

Seasoning

July 02, 2009
Seasoning is the process of imparting flavor to, or improving the flavor of, food. Seasonings include herbs, spices, and all other condiments, which are themselves frequently referred to as "seasonings". However, Larousse Gastronomique states that "to season and to flavour are not the same thing", insisting that seasoning includes a large or small amount of salt being added to a preparation. For instance, kosher salt (a coarser-grained salt) is rubbed into chicken, lamb, and beef to tenderize the meat and improve flavor. Other seasonings like black pepper and basil transfer some of their flavor to the food. A well designed dish may combine seasonings that complement each other.

Here's proven tips, ideas and suggestions for improving your food seasoning skills.

1. When seasoning gumbo, broths or other hot liquids, make sure they're at the same temperature you'll serve them to help keep the taste consistent.

2. Cold foods such as macaroni, potato or egg salad will need slightly more seasoning than hot food. The hotter the food the more our taste buds pick up flavors.

3. To intensify flavors, season chicken, fish, beef and pork before you cook them.

4. Season sauces, soups and gumbos after cooking to get a more accurate and consistent taste.

5. To avoid over seasoning apply a small amount taste, add and taste until the correct taste is achieved.

Takashi's Noodles

June 24, 2009
They say if you get just one great recipe from a cookbook, it is worth the price. In that case, let me tell you about Spicy Eggplant Ja-Ja-Men Udon. Chef Yakashi Takashi, owner of Takashi's in Chicago describes this dish as a Japanese version of spaghetti and bolognese sauce. It's basically a spicy eggplant and ground pork sauce over noodles with peppers, spicy notes and a creamy sauce that is enriched with sesame paste. The recipe has 18 ingredients but I skipped a few altogether and used substitutions for a couple more and can't imagine it made any discernible difference. I didn't bother with the 1/2 cup dashi, 1/3 cup canned bamboo shoots, teaspoon of cornstarch or 3 Tablespoons of sake. I used Chinese chili garlic paste instead of a Japanese variety and Chinese sesame paste instead of tahini. I had to buy exactly 2 ingredients to make the dish, green peppers and ground pork. I could eat this dish every week! It is so comforting and at the same time exciting. The recipes vary in the number of ingredients but are generally not that difficult. They are all Asian or Asian-influenced but not all Japanese. You'll find crispy noodles, chilled ramen and cold soba, curry shrimp rice noodles even potato gnocchi with lemon butter sauce, scallops and sea urchin. These are restaurant dishes adapted for cooking at home.

I was on a mission to try as many top-rated ramen joints as I could in Hawaii . While I'm still nowhere near satisfied with the ramen choices in San Francisco, I am pleased that on June 24th from 6:30 - 8:30 pm there will be a special program at the San Francisco Ferry Building called For the Love of Ramen sponsored by the Asian Culinary Forum. Andy Raskin, author of The Ramen King and I, Eric Nakamura, publisher and co-editor of the Asian-American pop culture magazine, Giant Robot and George Solt, assistant professor of history, New York University will be talking about ramen, a Japanese version of a Chinese noodle dish, with a history spanning the post World War II period all the way till today and including the instant version that has become so ubiquitous. There will be refreshments of course, and great conversation. As a side note, I've been to every Asian Culinary Forum event and they have all been very well-organized, good fun and offered plenty of food for thought.

Catering business

June 23, 2009
However small catering business that is done, the business must be taken seriously . This means the business must be place as a business that does not play and handle with a professional also.

Many things can be done to promote this business. Basically, each catering business already has these tips are generally the same. Such as how to market, pricing, menu or service.

For more details, described in more detail following these tips can be done by those who open a catering business.

1. Marketing
Determine the market or pick the ball. There is no one to make the brochure as a step in addition to the campaign efforts of mouth. It's good that they have some control this technology. Now its the era of the internet, everywhere people use the internet. No one suggested colleagues for their forward ad catering to colleagues the other.

2. Price
Usually, customers will prefer a catering business that set prices to compete. "If catering is to receive orders from mothers living in the housing complex, usually a little more choosy than the customer's office. To be more easily attract customers, set the price does not exceed the price of a standard portion of food in the surrounding area.

3. Menu
Menu make customers can not move is the catering menu options. People who subscribed office catering tend not too exacting in the matter. Origin of food is not stale and tasty, they will eat immediately. With different customers from among mothers. They are usually more careful of the type of food, menu, and hygienist. "Change the food as often as possible to avoid the boredom of the customer. By not forget the techniques of making a fixed observing the terms of hygiene during food processing. Do not be until the results of disappointing customers.

4. Taste
People will be reluctant to move if some already spoken with the appropriate catering customer. Although the menu changes, taste the food shall be fixed so that the customer does not feel that weird feeling in the tongue or changed. There is also a good idea, every catering the business along with the menu available at that time to attract more customers.

5. Services
This is also very important to continue to extend the age of the business and retain customers in order not to flee to some other. Catering business will not be looking at loss if many things. For example, the catering service catering to the home over the phone, try to answer the phone do not young children. Make this as a catering business seriously and professionally.

Catering foodservice

June 19, 2009
Catering is the business of providing foodservice at a remote site.

Many events require working with an entire theme or color scheme. A catering company or specialist is expected to know how to prepare food and to make it attractive. As such, certain catering companies have moved toward a full-service business model commonly associated with event planners. They take charge of not only food preparation but also decorations, such as table settings and lighting.

The trend is towards satisfying all the clients senses with food as a focal point. With the correct atmosphere, professional event caterers with experience can make an event special and memorable.

Beautifully prepared food alone can appeal to the senses of taste, smell, and sight - perhaps even touch, but the decorations and ambiance can play a significant part in a successfully catered event.

Catering is often sold on a per-person basis, meaning that there is a flat price for each additional person. However, things like lighting and fire permits are not scaled with the guest count, so per-person pricing is not always appropriate. It is necessary to keep the cost of the food and supplies below a price margin in order to make a profit on the catering.

As many others in the food service industry, caterers and their staff work long hours. It is not uncommon for them to work on holidays or 7 days a week during holiday event seasons.

A comprehensive, formal full-service catering proposal is likely to include the following elements:
* Time-line matters: rental arrival time, staff arrival time, bar open time, meal serve time, bar close time, rental pickup, out-of-venue time. Each of these factors affects the catering price.

For example, a rental quote for an "anytime" weekday delivery is usually much more economical than an "exact-time" delivery.

* General menu considerations: Clients may have specific dietary or religious needs to consider. these include Halal, Kosher, Vegetarian, Vegan and food allergy requests. Increasingly, clients are interested in food sustainability and food safety.
* Hors d'oeuvres: it should be clear if these are passed or stationary. Most caterers agree that three or four passed items are appropriate for the one-hour period prior to a meal.
* Meal Rentals: May include tables, chairs, dance floor, plants, tabletop (china, flatware, glassware, linens, chargers), bar glassware, serving equipment, salt/peppers, etc. It should be clear whether table and chair setup and take-down is included. Most rental companies do not automatically include setup and take-down in the rental charges.
* Labor: Verbiage varies from caterer to caterer, but generally speaking, an event will have a Lead/Captain/Event Manager, a Chef, perhaps a Sous Chef or Kitchen Assistant, Wait staff and Bartenders. The labor on a plated dinner is generally much higher than the labor on a buffet, because a plated dinner involves double the china, and usually a minimum of three served courses, plus served coffee. Simply put, there's a lot more to do. To do it properly requires roughly 10 to 50% more staff. On a large event, this can be substantial, especially if overtime or doubletime applies.
* Service Charge: Sales TaxSome quotes will include lighting, fire permits, draping, florals, valet and coat check. Many venues discreetly get a "cut" of the catering bill. Caterers are contractually committed to not disclose this fee specifically in their contracts with the clients. Therefore, catering will sometimes cost substantially more at one venue versus another. Also, caterers must compete with illegal operators. A legitimate caterer will have a business license and a health permit both showing the address of the place from which they do business.

Milk fermentation

June 02, 2009
When this fermentation milk already popular in the community. Various trademarks appear much, either came from overseas and domestic. One of the milk fermentation that is known by knowledgeable society is yoghurt. This product even has the start produced by small entrepreneurs with the means and equipment that is quite simple.

Milk fermentation indeed has some advantages and savor the good for the body. With the fermentation process will produce different types of acid laktat to the body. In addition laktosa in the milk compound has been described to be a more simple, so that is not capable excression laktosa (lactose intolerance) can still enjoy the milk. As we know that some people because a certain deviation in the food system excression can not crash laktosa. So that patients will experience diarrhea if drink milk.

Milk fermentation is done by adding a starter of some form of bacteria that can produce acid laktat. Because the bacteria are usually classified into laktat acid bacteria. This is the type of bacteria that will determine the nature and the fermentation milk caracter produced. For example, certain bacteria will produce acid laktat, while other bacteria that produce a certain flavor, and there is also a result of alcohol.

Drink milk fermentation has actually grown since days of old. With progress in the field of fermentation technology, this product continues to grow in accordance with the wishes and tastes, also increased. Milk change the nature of fermentation can be done to modify the type and amount of bacteria added as starter. Because the type of bacteria that is in the nature very much, the milk fermentation and then developing a lot of type.

Actually in the first fermentation milk does not contain alcohol. Bacteria that produce acid only added laktat-acid and other acids which have a characteristic taste and aroma. This is usually referred to as yoghurt. The bacteria is added to the making of yoghurt are Lactobacillus bulgaricus and Streptococcus thermophilus. The two are synergistic bacteria decompose protein and laktosa milk into amino acids, formiat acid and acid laktat that produce the taste and special aroma. In addition, the nutrition component of decomposition is also able to increase the nutrient value of milk, because it is easily digested and absorbed the body.

Along with the human desire to continue to grow, and finally they try to develop bacteria-bacteria that produce a sense for the other also. From there milk finally found the alcoholic fermentation, resulting in a sense that is preferred, although it is not lawful.

Some milk the alcoholic fermentation are koumiss and kefir. Kefir is a susu alcoholic fermentation of 0.5% - 1%. The bacteria that cause terbentuknya alcohol is Sacharomycfes kefir and Torula kefir. On koumiss, womb alcohol is higher again. This product contains alcohol as much as 1% - 2.5%. Microbes that cause the emergence and added alcohol is Torulla colmic.
